Ingredients
  

Creamy Chicken Filling
  • 0.25 cup unsalted butter
  • 1 medium onion diced
  • 2 carrots sliced
  • 2 stalks celery chopped
  • 2 cloves garlic minced
  • 0.33 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 3 cups cooked chicken shredded or cubed
  • 1 cup frozen peas
  • 1 tsp dried thyme
Cheddar Bay Biscuit Topping
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 0.5 tsp baking soda
  • 1 tsp garlic powder
  • 0.5 cup unsalted butter cold and cubed
  • 1.5 cups sharp cheddar cheese shredded
  • 1 cup buttermilk cold
Garlic Butter Glaze
  • 3 tbsp butter melted
  • 0.5 tsp garlic powder
  • 1 tsp dried parsley

Equipment

  • Cast Iron Skillet (10 or 12 inch)
  • Mixing bowls

Method
 

  1. Preheat oven to 400°F (200°C).
  2. In a large oven-safe skillet, melt 1/4 cup butter over medium heat. Add onion, carrots, and celery. Sauté 5-7 minutes until soft. Add fresh garlic and thyme, cook 1 min.
  3. Sprinkle 1/3 cup flour over veggies. Stir for 2 minutes to cook the roux.
  4. Slowly whisk in chicken broth followed by heavy cream. Simmer 3-4 minutes until thickened.
  5. Stir in cooked chicken and peas. Season with salt and pepper to taste. Remove from heat.
  6. For biscuits: Whisk flour, baking powder, baking soda, garlic powder, and salt. Cut in cold cubed butter until crumbly. Stir in cheese.
  7. Add buttermilk and stir gently until just combined. Do not overmix.
  8. Drop large scoops of dough onto the chicken filling in the skillet.
  9. Bake 18-22 minutes until biscuits are golden brown and filling is bubbling.
  10. Mix melted butter, garlic powder, and parsley. Brush over hot biscuits immediately.

Notes

Use a rotisserie chicken to save time.
