- Preheat oven to 400°F (200°C).
- In a large oven-safe skillet, melt 1/4 cup butter over medium heat. Add onion, carrots, and celery. Sauté 5-7 minutes until soft. Add fresh garlic and thyme, cook 1 min.
- Sprinkle 1/3 cup flour over veggies. Stir for 2 minutes to cook the roux.
- Slowly whisk in chicken broth followed by heavy cream. Simmer 3-4 minutes until thickened.
- Stir in cooked chicken and peas. Season with salt and pepper to taste. Remove from heat.
- For biscuits: Whisk flour, baking powder, baking soda, garlic powder, and salt. Cut in cold cubed butter until crumbly. Stir in cheese.
- Add buttermilk and stir gently until just combined. Do not overmix.
- Drop large scoops of dough onto the chicken filling in the skillet.
- Bake 18-22 minutes until biscuits are golden brown and filling is bubbling.
- Mix melted butter, garlic powder, and parsley. Brush over hot biscuits immediately.

Use a rotisserie chicken to save time.
