Method
- Place chopped white chocolate in a heat-proof bowl.
- In a saucepan, heat heavy cream and espresso powder until simmering and powder is dissolved.
- Pour hot cream over chocolate. Let sit for 5 minutes.
- Add butter and salt. Stir gently until smooth and glossy. Cover and refrigerate 2-3 hours until firm.
- Scoop ganache into balls and freeze for 15 minutes.
- Melt dark chocolate (and coconut oil) in microwave until smooth.
- Dip cold truffles into melted chocolate, let excess drip off, and place on parchment.
- Dust with cocoa powder immediately. Let set at room temperature.
Notes
Use instant espresso powder for the best flavor without adding excess liquid.
