Ingredients
  

Coffee Ganache Filling
  • 10 oz white chocolate chopped, high quality
  • 0.5 cup heavy cream
  • 1 tbsp instant espresso powder
  • 1 tbsp unsalted butter softened
  • 1 pinch salt
Chocolate Coating
  • 8 oz dark chocolate 60-70% cocoa
  • 1 tsp coconut oil optional
  • 2 tbsp cocoa powder for dusting

  • Small saucepan

Method
 

  1. Place chopped white chocolate in a heat-proof bowl.
  2. In a saucepan, heat heavy cream and espresso powder until simmering and powder is dissolved.
  3. Pour hot cream over chocolate. Let sit for 5 minutes.
  4. Add butter and salt. Stir gently until smooth and glossy. Cover and refrigerate 2-3 hours until firm.
  5. Scoop ganache into balls and freeze for 15 minutes.
  6. Melt dark chocolate (and coconut oil) in microwave until smooth.
  7. Dip cold truffles into melted chocolate, let excess drip off, and place on parchment.
  8. Dust with cocoa powder immediately. Let set at room temperature.

Notes

Use instant espresso powder for the best flavor without adding excess liquid.
