Ingredients
  

Brownie Base
  • 0.5 cup unsalted butter melted (113g)
  • 1 cup granulated sugar (200g)
  • 2 large eggs
  • 1 tsp vanilla extract
  • 0.5 cup all-purpose flour (60g)
  • 0.5 cup unsweetened cocoa powder (50g)
  • 0.25 tsp baking powder
  • 0.25 tsp salt
Coffee Soak
  • 0.5 cup strong-brewed coffee cooled
  • 2 tbsp granulated sugar
  • 2 tbsp coffee liqueur or rum optional
Mascarpone Topping
  • 8 oz mascarpone cheese cold (227g)
  • 1.5 cups heavy whipping cream cold (360ml)
  • 0.5 cup powdered sugar (60g)
  • 1 tsp vanilla extract
  • Unsweetened cocoa powder for dusting

Equipment

  • Parchment paper
  • Large mixing bowl

Method
 

  1. Preheat oven to 350°F (175°C). Line a 9x9-inch pan with parchment paper, leaving an overhang.
  2. In a large bowl, whisk melted butter and sugar. Add eggs and vanilla, whisking well until glossy.
  3. In a separate bowl, whisk flour, cocoa powder, baking powder, and salt. Add dry ingredients to the wet, folding with a spatula until just combined. Do not overmix.
  4. Pour batter into the prepared pan and bake for 22-25 minutes. A toothpick should have moist crumbs.
  5. Let the brownie cool completely in the pan.
  6. For the soak: Mix cooled coffee, sugar, and liqueur. Poke the cooled brownie all over with a fork and pour the soak evenly on top. Let sit 15 minutes.
  7. For the topping: In a large, chilled bowl, beat the cold mascarpone, cold heavy cream, powdered sugar, and vanilla with an electric mixer until thick, stiff peaks form (3-5 minutes).
  8. Spread the mascarpone topping evenly over the coffee-soaked brownie.
  9. Cover and refrigerate for at least 4 hours, or overnight, to set.
  10. Before serving, lift the slab out using the parchment paper. Dust generously with cocoa powder and slice into squares.

Notes

Ensure the brownie is completely cool before soaking and adding the topping. Use cold mascarpone and heavy cream for a stable, thick topping. Store leftovers in the refrigerator.
