Ingredients
  

Ricotta Base
  • 15 oz ricotta cheese drained well
  • 0.25 cup sugar
  • 1 large egg
  • 0.5 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 tsp orange zest optional
Toppings
  • 0.33 cup honey warmed
  • 0.25 cup pistachios chopped
  • 1 tbsp sesame seeds

Method
 

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Drain ricotta cheese well to remove excess liquid.
  3. In a bowl, whisk ricotta, sugar, egg, vanilla, and orange zest until smooth.
  4. Fold in flour and baking powder until a soft dough forms.
  5. Scoop tablespoons of dough onto the baking sheet.
  6. Bake for 15-20 minutes until puffed and slightly golden on the bottom.
  7. Transfer to a plate and immediately drizzle with warm honey.
  8. Sprinkle with chopped pistachios and sesame seeds. Serve warm.

Notes

Ensure ricotta is drained thoroughly or the bites will spread too much.
