Ingredients
  

Roasted Aromatics
  • 1 head garlic top sliced off
  • 1 cup cherry tomatoes
  • 2 tbsp olive oil divided
Dip Base
  • 10 oz goat cheese softened log
  • 8 oz cream cheese softened
  • 1 tbsp fresh thyme plus more for garnish
  • 0.5 tsp black pepper freshly cracked
  • 1 tsp honey optional for drizzling
  • 0.25 tsp red pepper flakes optional

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Drizzle the garlic head with olive oil and wrap in foil. Toss cherry tomatoes with oil, salt, and pepper on a baking sheet.
  3. Roast garlic for 40 minutes and tomatoes for 20 minutes (until blistered). Let cool.
  4. In a mixing bowl, whip goat cheese, cream cheese, 1 tbsp olive oil, and thyme until fluffy.
  5. Squeeze roasted garlic cloves out of skins and fold into the cheese mixture.
  6. Spread mixture into a small baking dish. Bake at 375°F (190°C) for 15-20 minutes until warm.
  7. Top with roasted tomatoes, a drizzle of honey, more thyme, and serve with baguette.

Notes

Ensure cheeses are at room temperature before mixing for the smoothest texture.
