Ingredients
  

  • 2 large firm but ripe pears halved lengthwise and cored
  • 1 tbsp olive oil
  • 0.25 tsp salt
  • 0.125 tsp black pepper
  • 0.25 cup dried cranberries or fresh cranberries
  • 0.25 cup crumbled feta cheese
  • 1-2 sprigs fresh thyme leaves removed, plus extra for garnish
  • 1 tbsp honey or maple syrup optional, for extra glaze

Method
 

  1. Preheat oven to 400°F (200°C). Halve and core pears. Place cut-side up on a parchment-lined baking sheet.
  2. Drizzle pears with olive oil, salt, pepper, and optional honey/maple syrup.
  3. Roast for 20-25 minutes until tender and golden. Pears will release caramelized juices, forming a **thick gooey sauce**.
  4. Remove from oven. Sprinkle with dried cranberries, crumbled feta, and fresh thyme leaves.
  5. Return to oven for 5-7 minutes until feta softens and cranberries are plump and release sticky, **viscous juices**.
  6. Transfer to a serving platter. Garnish with extra thyme. Serve warm, enjoying the **thick gooey caramelized juices**.

Notes

Use firm, ripe pears. The natural sugars and cranberries create a delicious, gooey glaze. Great served as a side or a light dessert.
