An easy, addictive, no-bake holiday candy made from butter crackers coated in a buttery, crunchy caramel layer and topped with flaky sea salt.

Ingredients
  

Caramel Base
  • 1 cup unsalted butter 2 sticks
  • 1 cup light brown sugar packed
  • 1 tsp vanilla extract
Crunch and Finish
  • 10 oz round butter crackers about 1 sleeve
  • 1.5 tsp flaky sea salt Maldon or similar

Equipment

  • Large baking sheet
  • Parchment paper or silicone mat
  • Heavy-bottomed saucepan
  • Wooden spoon

Method
 

  1. Line a large baking sheet with parchment paper. Arrange crackers in a single layer, touching or slightly overlapping. Set aside.
  2. In a saucepan, combine butter and brown sugar. Cook over medium heat, stirring, until melted and boiling.
  3. Boil for exactly 3 to 4 minutes, stirring constantly. Remove from heat and stir in vanilla extract.
  4. Quickly pour hot caramel evenly over the crackers, spreading with an offset spatula to coat completely.
  5. Immediately sprinkle generously with flaky sea salt.
  6. Let cool completely at room temperature (about 1 hour) or chill for 20 minutes until firm and brittle.
  7. Break into individual pieces and store in an airtight container.

Notes

Boiling for the full 3-4 minutes is critical for the caramel to set properly and not be sticky.
