Ingredients
  

Blackberry Syrup (yields extra)
  • 1.5 cups Frozen blackberries
  • 1/2 cup Granulated sugar
  • 1/2 cup Water
Salted Honey Latte Base
  • 2 shots Espresso hot and freshly brewed
  • 1.5 tablespoons Honey adjust to desired sweetness
  • 1/8 teaspoon Sea salt fine grain
  • 1 cup Milk of choice oat milk or whole milk recommended
  • 1 cup Ice cubes
Blackberry Cold Foam
  • 3 tablespoons Heavy whipping cream cold
  • 2 teaspoons Powdered sugar
  • 1/4 teaspoon Vanilla extract
  • 1 tablespoon Homemade blackberry syrup from above

Equipment

  • Espresso Machine or Moka Pot
  • Small saucepan
  • Handheld milk frother
  • Fine-mesh strainer

Method
 

  1. Make the syrup: In a small saucepan, combine frozen blackberries, granulated sugar, and water. Bring to a boil, then reduce heat and simmer for 10-15 minutes, mashing the berries as they cook.
  2. Strain the syrup through a fine-mesh sieve into a jar, pressing the berries to extract all the liquid. Discard the pulp and let the syrup cool completely.
  3. Brew the espresso: Pull 2 shots of fresh espresso into a heat-proof glass. Immediately stir in the honey and sea salt while the coffee is hot until fully dissolved.
  4. Make the cold foam: In a small frothing pitcher or glass, combine the heavy whipping cream, powdered sugar, vanilla extract, and 1 tablespoon of the cooled blackberry syrup.
  5. Using a handheld milk frother, froth the cream mixture for 30-45 seconds until it thickens to a pourable, velvety foam consistency (like melted ice cream).
  6. Assemble the drink: Fill a tall glass with ice. Pour in your milk of choice. Slowly pour the salted honey espresso mixture over the milk.
  7. Gently pour the blackberry cold foam over the top of the drink. Garnish with an edible flower if desired, and enjoy immediately!

Notes

The blackberry syrup recipe yields enough for several lattes and will keep in the fridge for up to 2 weeks. Always froth the cold foam right before serving.
