- In a large bowl, beat softened butter and sugars until creamy (about 2 minutes). Add egg yolk and extracts; mix until combined.
- Whisk flour and fine salt together in a small bowl. Gradually add to the butter mixture on low speed until just combined.
- Fold in chopped pistachios by hand. Form dough into a log about 2 inches in diameter. Wrap in plastic wrap and chill for at least 2 hours.
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Roll the chilled dough log in coarse sugar to coat the outside. Slice into 1/2-inch thick rounds.
- Place on baking sheets spaced 2 inches apart. Bake 12-14 minutes until edges are barely golden.
- Sprinkle with flaky sea salt immediately if desired. Cool on baking sheet for 5 minutes, then transfer to wire rack.
Notes
Dough can be frozen for up to 3 months. Thaw in fridge overnight before slicing.
