Ingredients
  

Cookie Dough
  • 1 cup unsalted butter softened
  • 1.5 cups granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2.75 cups all-purpose flour
  • 2 tsp cream of tartar
  • 1 tsp baking soda
  • 0.5 tsp salt
Topping
  • 0.25 cup granulated sugar for rolling
  • 2 tbsp ground cinnamon for rolling
  • 0.5 cup sliced almonds for decoration

Method
 

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, cream of tartar, baking soda, and salt.
  3. In a large bowl, cream together softened butter and 1.5 cups sugar until light and fluffy (about 3 minutes).
  4. Beat in eggs one at a time, then add vanilla extract.
  5. Gradually mix in dry ingredients until just combined.
  6. In a small bowl, mix the 1/4 cup sugar and cinnamon.
  7. Shape dough into 1-inch balls and roll in the cinnamon-sugar mixture.
  8. Place on baking sheets. Press 5 almond slices into the top of each ball in a star pattern to resemble a sand dollar.
  9. Bake for 8-10 minutes or until edges are set. Cool on baking sheet for 5 minutes before transferring to wire rack.

Notes

Ensure butter is at room temperature for the best texture. Do not overbake; they should be soft in the center.
