Ingredients
  

Filling
  • 1 lb ground beef 80% lean
  • 2 medium onions finely chopped
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 0.5 tsp cumin
  • 0.25 cup parsley chopped
Pastry & Assembly
  • 16 oz phyllo dough thawed
  • 2 eggs divided use
  • 0.5 cup milk
  • 0.5 cup vegetable oil
  • 0.25 cup soda water sparkling water
  • 2 tbsp sesame seeds for topping

Method
 

  1. Sauté chopped onions in olive oil until soft. Add ground beef and cook until browned and liquid evaporates.
  2. Season beef with salt, pepper, paprika, and cumin. Stir in parsley and let cool completely.
  3. Preheat oven to 375°F (190°C). Grease a round baking pan.
  4. Whisk 1 egg, milk, oil, and soda water in a bowl to make the sauce.
  5. Layer 2 sheets of phyllo, brushing lightly with sauce between layers.
  6. Place a line of filling along the edge and roll into a long log.
  7. Coil the log into the center of the pan. Repeat with remaining ingredients, wrapping coils around the center to form a spiral.
  8. Brush the top with the remaining beaten egg and sprinkle with sesame seeds.
  9. Bake for 45 minutes until golden brown. Let rest 10 minutes before slicing.

Notes

Keep phyllo dough covered with a damp towel while working to prevent drying. Serve with yogurt or fresh salad.
