Ingredients
  

  • 2 packages cream cheese 8-ounce, softened
  • 0.5 cup unsalted butter softened
  • 0.5 cup pitted green olives finely chopped
  • 0.5 cup pitted black olives finely chopped
  • 0.5 cup red bell pepper finely diced
  • 0.25 cup fresh parsley finely chopped
  • 2 tbsp fresh chives finely chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp black pepper freshly ground
  • 0.25 tsp salt or to taste
  • Assorted crackers
  • Fresh rosemary sprigs for garnish

Equipment

  • Plastic wrap

Method
 

  1. In a large bowl, beat softened cream cheese and butter with an electric mixer until smooth and creamy.
  2. Add chopped green olives, black olives, red bell pepper, parsley, chives, garlic powder, onion powder, black pepper, and salt to the cream cheese mixture.
  3. Using a spatula, gently fold all ingredients until evenly distributed. Do not overmix.
  4. Lay a large piece of plastic wrap on a work surface. Spoon the mixture onto the center.
  5. Using the plastic wrap, shape the mixture into a log (approx. 6-8 inches long, 2-3 inches diameter). Press firmly to remove air pockets. Twist ends of plastic wrap to seal.
  6. Chill in the refrigerator for at least 4 hours, or preferably overnight, until firm.
  7. When ready to serve, unwrap the log and transfer to a serving platter or board.
  8. Garnish with fresh rosemary sprigs or extra chives and serve with assorted crackers.

Notes

Ensure cream cheese and butter are fully softened for a smooth log. Chill thoroughly for best results. Leftovers keep well in the fridge for up to 5-7 days.
