- In a large bowl, beat softened cream cheese and butter with an electric mixer until smooth and creamy.
- Add chopped green olives, black olives, red bell pepper, parsley, chives, garlic powder, onion powder, black pepper, and salt to the cream cheese mixture.
- Using a spatula, gently fold all ingredients until evenly distributed. Do not overmix.
- Lay a large piece of plastic wrap on a work surface. Spoon the mixture onto the center.
- Using the plastic wrap, shape the mixture into a log (approx. 6-8 inches long, 2-3 inches diameter). Press firmly to remove air pockets. Twist ends of plastic wrap to seal.
- Chill in the refrigerator for at least 4 hours, or preferably overnight, until firm.
- When ready to serve, unwrap the log and transfer to a serving platter or board.
- Garnish with fresh rosemary sprigs or extra chives and serve with assorted crackers.
Notes
Ensure cream cheese and butter are fully softened for a smooth log. Chill thoroughly for best results. Leftovers keep well in the fridge for up to 5-7 days.
