Ingredients
  

Vegetables
  • 2 lbs baby potatoes halved
  • 4 cloves garlic minced
  • 1 block feta cheese crumbled (approx 7oz)
Seasoning
  • 0.33 cup olive oil extra virgin
  • 1 tbsp dried oregano
  • 5 sprigs fresh thyme leaves removed from stem
  • 1 tsp salt to taste
  • 0.5 tsp black pepper
  • 0.5 tsp red pepper flakes optional

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Wash potatoes and cut them in half. Place them in a large mixing bowl.
  3. Add olive oil, minced garlic, dried oregano, salt, black pepper, and red pepper flakes to the bowl.
  4. Toss well until potatoes are evenly coated with the oil and spices.
  5. Spread potatoes in a single layer on a baking sheet, cut-side down for maximum crispiness.
  6. Roast for 30-35 minutes until potatoes are tender and golden brown.
  7. Remove from oven, flip potatoes gently, and sprinkle crumbled feta cheese and fresh thyme over the top.
  8. Return to oven for 5-10 minutes until feta is warm and slightly melted.
  9. Serve immediately while hot.

Notes

Use a block of feta rather than pre-crumbled for a creamier texture. You can substitute dried herbs for fresh if needed, but use half the amount.
