Main Ingredients
  • 14 oz smoked sausage sliced into rounds (kielbasa or turkey sausage)
  • 1 lb baby potatoes quartered
  • 2 cups broccoli florets optional
  • 1 large zucchini sliced into half moons
  • 1 large yellow squash sliced into half moons
  • 1 large red bell pepper chopped
  • 1 large red onion chopped
Seasoning
  • 3 tbsp olive oil
  • 1 tbsp Italian seasoning dried
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 0.5 tsp salt or to taste
  • 0.5 tsp black pepper

Equipment

  • Large rimmed baking sheet
  • Knife
  • Cutting board
  • Spatula

Method
 

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil.
  2. Wash and chop all vegetables. Ensure potatoes are cut smaller (1/2 inch) than the softer vegetables so they cook evenly.
  3. Slice the smoked sausage into 1/2 inch thick rounds.
  4. Place sausage and vegetables on the baking sheet.
  5. Drizzle with olive oil and sprinkle with Italian seasoning, garlic powder, paprika, salt, and pepper.
  6. Toss well with your hands or tongs until everything is evenly coated.
  7. Spread into a single layer, ensuring the pan is not overcrowded.
  8. Bake for 25-35 minutes, tossing halfway through, until veggies are tender and sausage is browned.
  9. Serve hot immediately, garnished with fresh parsley if desired.

Notes

Store leftovers in airtight containers for up to 4 days. Reheat in the microwave or air fryer.
