Ingredients
  

Chicken & Sauce
  • 4 boneless skinless chicken breasts
  • 0.5 cup fig jam or fig preserves
  • 2 tbsp balsamic vinegar
  • 1 tbsp soy sauce use Tamari for GF
  • 3 cloves garlic minced
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.5 tsp black pepper
Toppings
  • 4 oz goat cheese crumbled
  • 4-5 sprigs fresh thyme

Method
 

  1. Pat chicken breasts dry and season generously with salt and pepper.
  2. (Optional) Heat olive oil in a skillet over medium-high heat and sear chicken for 2-3 minutes per side until golden.
  3. Place chicken in the slow cooker. In a small bowl, whisk together fig jam, balsamic vinegar, soy sauce, and minced garlic.
  4. Pour the mixture over the chicken, ensuring pieces are coated.
  5. Cover and cook on LOW for 4-5 hours or HIGH for 2-3 hours, until chicken reaches 165°F.
  6. During the last 15 minutes of cooking, crumble the goat cheese over the chicken and replace the lid to let the cheese soften.
  7. Garnish with fresh thyme sprigs and serve immediately with extra sauce spooned over the top.

Notes

Serve over mashed potatoes or with roasted asparagus.
