- Pat chicken breasts dry and season generously with salt and pepper.
- (Optional) Heat olive oil in a skillet over medium-high heat and sear chicken for 2-3 minutes per side until golden.
- Place chicken in the slow cooker. In a small bowl, whisk together fig jam, balsamic vinegar, soy sauce, and minced garlic.
- Pour the mixture over the chicken, ensuring pieces are coated.
- Cover and cook on LOW for 4-5 hours or HIGH for 2-3 hours, until chicken reaches 165°F.
- During the last 15 minutes of cooking, crumble the goat cheese over the chicken and replace the lid to let the cheese soften.
- Garnish with fresh thyme sprigs and serve immediately with extra sauce spooned over the top.
