Ingredients
  

Cookie Layer
  • 16 oz refrigerated chocolate chip cookie dough or homemade
Oreo Layer
  • 24-30 Oreo cookies enough to cover pan
Cheesecake Layer
  • 16 oz cream cheese softened (2 blocks)
  • 0.5 cup granulated sugar
  • 2 large eggs room temperature
  • 1 tsp vanilla extract
  • 1 pinch salt
Topping
  • 0.25 cup caramel sauce for drizzling

Equipment

  • 9x9 or 9x13 inch baking pan
  • Electric mixer
  • Parchment paper

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking pan (9x9 or 9x13) with parchment paper leaving an overhang.
  2. Press the chocolate chip cookie dough evenly into the bottom of the prepared pan to form the first layer.
  3. Arrange the Oreo cookies in a single flat layer directly on top of the cookie dough.
  4. In a large bowl, beat softened cream cheese and sugar until smooth. Add eggs one at a time, mixing gently. Stir in vanilla and salt.
  5. Pour the cheesecake batter over the Oreo layer and smooth the top with a spatula.
  6. Bake for 30-45 minutes (depending on pan size) until edges are set and center is slightly jiggly.
  7. Cool completely at room temperature, then refrigerate for at least 3 hours to set.
  8. Lift out of pan using parchment paper, slice into bars, and drizzle with caramel sauce before serving.

Notes

Ensure cream cheese and eggs are at room temperature for a smooth batter. Do not cut while warm or the layers will fall apart.
