Method
- Preheat oven to 350°F (175°C). Line a baking pan (9x9 or 9x13) with parchment paper leaving an overhang.
- Press the chocolate chip cookie dough evenly into the bottom of the prepared pan to form the first layer.
- Arrange the Oreo cookies in a single flat layer directly on top of the cookie dough.
- In a large bowl, beat softened cream cheese and sugar until smooth. Add eggs one at a time, mixing gently. Stir in vanilla and salt.
- Pour the cheesecake batter over the Oreo layer and smooth the top with a spatula.
- Bake for 30-45 minutes (depending on pan size) until edges are set and center is slightly jiggly.
- Cool completely at room temperature, then refrigerate for at least 3 hours to set.
- Lift out of pan using parchment paper, slice into bars, and drizzle with caramel sauce before serving.
Notes
Ensure cream cheese and eggs are at room temperature for a smooth batter. Do not cut while warm or the layers will fall apart.
