Ingredients
  

Pancake Batter
  • 2 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp kosher salt
  • 2 cups buttermilk room temperature
  • 2 large eggs
  • 0.25 cup unsalted butter melted and cooled
  • 1 tsp pure vanilla extract
Burger Fillings & Toppings
  • 1.5 lbs ground beef 80/20 ratio
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 8 slices American cheese
  • 8 slices thick-cut bacon
  • 1 cup pure maple syrup warmed

Equipment

  • Cast iron skillet or griddle
  • Heavy spatula or burger press
  • Mixing bowls
  • Parchment paper

Method
 

  1. Cook the bacon in a skillet until crispy. Remove to a paper towel. Reserve bacon fat if making caramelized onions.
  2. Whisk dry pancake ingredients in a large bowl. In a separate bowl, whisk buttermilk, eggs, melted butter, and vanilla.
  3. Fold wet ingredients into the dry ingredients until just combined. Let rest for 5-10 minutes.
  4. Cook pancakes on a buttered griddle over medium heat until golden brown. Keep warm in the oven.
  5. Divide ground beef into 8 loose balls. Place on a smoking hot griddle. Use parchment paper and a heavy spatula to smash them flat.
  6. Season generously with salt and pepper. Cook for 2 minutes until crust forms, flip, add a slice of cheese, and cook 1 more minute.
  7. Assemble the stacks: Place a pancake on a plate, top with a cheesy smash patty and bacon. Repeat. Top with a final pancake.
  8. Drench the entire stack generously in warm maple syrup and serve immediately.

Notes

Using parchment paper between the meat and your spatula prevents the meat from sticking when you perform the smash technique.
