Ingredients

For the Toast (per serving)
  • 1 slice Hearty Bread (sourdough, whole grain, or rye)
  • 0.5 medium Ripe Avocado
  • 0.5 tsp Fresh Lemon Juice
  • pinch Salt
  • Freshly Ground Black Pepper to taste
  • 2 ounces Smoked Salmon (lox), thinly sliced
  • 3 slices Red Onion thinly sliced
  • 1 tsp Capers drained
  • sprigs Fresh Dill for garnish

Equipment

  • Toaster or Toaster Oven
  • Small bowl and fork

Method

  1. Toast the Bread: Toast the bread slice until crisp.
  2. Smash Avocado: In a small bowl, mash avocado with a fork until a thick, gooey, viscous consistency is reached. Stir in lemon juice, salt, and pepper.
  3. Spread Base: Spread the thick gooey avocado evenly over the toast.
  4. Layer Toppings: Arrange the smoked salmon over the avocado. Scatter red onion slices and capers on top.
  5. Finish and Serve: Dust generously with black pepper. Garnish with fresh dill sprigs and serve immediately.

Notes

For best flavor, use good quality smoked salmon. Mashing the avocado with lemon juice helps maintain its fresh color. Serving immediately ensures the bread remains crunchy against the heavy viscous avocado base.
