  • 1 large pineapple peeled, cored, and cut into chunks
  • 1 lb standard-cut bacon cut in half
Smokey Glaze
  • 0.5 cup dark brown sugar packed
  • 1 tbsp smoked paprika
  • 0.5 tsp cayenne pepper adjust to taste
  • 1 tsp garlic powder
  • 1 tbsp low-sodium soy sauce
  • 1 pinch black pepper freshly ground

Method
 

  1. Soak wooden skewers in water for at least 30 minutes. Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a greased wire rack on top.
  2. In a bowl, mix brown sugar, smoked paprika, cayenne, garlic powder, soy sauce, and black pepper to form a paste.
  3. Wrap each pineapple chunk tightly with a half-slice of bacon and thread onto the soaked skewers.
  4. Brush or rub the smokey brown sugar glaze generously over the bacon-wrapped pineapple chunks.
  5. Place skewers on the wire rack. Bake for 20-25 minutes until bacon is rendered and crispy.
  6. Broil for an additional 1-2 minutes if extra char is desired. Watch closely to prevent burning.
  7. Let cool for 5 minutes on the rack before serving, as the sugar glaze will be very hot.

Notes

Using standard-cut bacon rather than thick-cut ensures the meat crisps up before the pineapple turns mushy.
