Ingredients
  

Snowman Structure
  • 12 balls bocconcini mozzarella larger size
  • 12 balls ciliegine mozzarella smaller size
  • 6 slices cherry tomatoes halved (12 halves total)
  • 12 slices English cucumber cut into thick rounds
  • 12 leaves fresh basil
Decoration
  • 1 slice carrot for noses
  • 1 tsp black peppercorns or black sesame seeds
  • 1 tbsp balsamic glaze optional, for dipping

  • Bamboo skewers or toothpicks
  • Knife
  • Cutting board

Method
 

  1. Wash and dry all vegetables and herbs. Slice the cucumber into 12 rounds, about 1/2 inch thick.
  2. Slice the cherry tomatoes in half (or just slice off the bottom third) to create 'hats'.
  3. Cut the carrot slice into 12 tiny triangles for the noses.
  4. To assemble, thread a tomato hat, then a smaller mozzarella ball (head), then a basil leaf (scarf), and finally a larger mozzarella ball (body) onto a skewer.
  5. Press the bottom of the skewer into a cucumber slice so the snowman stands upright.
  6. Using the tip of a knife, create a small slit in the top cheese ball and insert the carrot nose.
  7. Press peppercorns or sesame seeds into the cheese to create eyes and buttons. Serve immediately or refrigerate.

Notes

Ensure mozzarella is drained well so the snowmen aren't slippery. Warn guests if using whole peppercorns.
