Soft Glazed Eggnog Bites

Ingredients
  

Cookie Dough
  • 1 cup unsalted butter softened
  • 0.75 cup granulated sugar
  • 0.5 cup eggnog full fat preferred
  • 1 egg yolk large
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1.5 tsp ground nutmeg freshly grated
  • 0.5 tsp cinnamon
  • 1 tsp baking powder
  • 0.5 tsp salt
Eggnog Glaze
  • 2 cups powdered sugar sifted
  • 3-4 tbsp eggnog adjust for consistency
  • 1 tbsp butter melted
  • 0.25 tsp nutmeg plus more for garnish

Equipment

  • Stand mixer or hand mixer
  • Baking sheets
  • Wire rack
  • Microplane/Grater

Method
 

  1. Cream butter and sugar on medium-high speed until pale and fluffy (3-4 mins).
  2. Add egg yolk, 1/2 cup eggnog, and vanilla. Mix until combined.
  3. In a separate bowl, whisk flour, nutmeg, cinnamon, baking powder, and salt.
  4. Gradually add dry ingredients to wet, mixing just until no flour streaks remain.
  5. Divide dough in half. Shape into rectangular logs (1x2 inches). Wrap in plastic and chill for at least 1 hour.
  6. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  7. Slice logs into thick squares. Place 2 inches apart on baking sheet.
  8. Bake 12-14 mins until set and bottoms are light gold. Cool on rack.
  9. Whisk glaze ingredients together until smooth. Dip cooled cookies and sprinkle with nutmeg.

Notes

Chill time is mandatory for texture. Store in airtight container.
