Spicy and Creamy Cajun Corn on the Cob

Ingredients
  

The Corn
  • 6 ears fresh corn shucked
  • 2 tbsp butter melted
  • 1 tbsp Cajun seasoning for dusting
The Sauce
  • 0.25 cup mayonnaise
  • 0.25 cup sour cream
  • 1 tbsp lime juice fresh
  • 1 tbsp Cajun seasoning for sauce
  • 1 clove garlic minced
The Toppings
  • 0.5 cup Cotija cheese crumbled
  • 0.25 cup fresh cilantro chopped
  • 2 stalks green onions sliced

Equipment

  • Grill or Oven
  • Tongs
  • Pastry brush
  • Small bowl

Method
 

  1. Preheat grill to medium-high heat (400°F).
  2. In a bowl, whisk mayo, sour cream, lime juice, garlic, and 1 tbsp Cajun seasoning. Refrigerate.
  3. Brush corn with melted butter and sprinkle with remaining Cajun seasoning.
  4. Grill corn for 10-12 minutes, turning often, until charred and tender.
  5. Remove from grill. Brush generously with the creamy sauce.
  6. Top with crumbled Cotija cheese, cilantro, and green onions. Serve hot.

Notes

If you don't have a grill, you can roast the corn in the oven at 400°F for 20-25 minutes.
