Spicy Garlic Butter Steak Noodles

Tender bites of seared steak and wide ribbon noodles tossed in a rich, spicy garlic butter and soy sauce glaze. A 20-minute comfort meal.

Ingredients
  

Steak & Noodles
  • 1 lb ribeye or sirloin steak cubed
  • 8 oz wide noodles pappardelle or egg noodles
  • 1 tbsp oil for searing
  • 1 pinch salt and pepper
Sauce
  • 4 tbsp unsalted butter
  • 5 cloves garlic minced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 2 tsp chili flakes or chili oil
  • 0.5 cup pasta water reserved
Garnish
  • 2 stalks green onions chopped
  • 1 handful cilantro chopped

Equipment

  • Large skillet or wok
  • Large pot
  • Tongs
  • Chef's knife

Method
 

  1. Boil noodles in salted water according to package directions. Reserve 1/2 cup pasta water, then drain.
  2. Cut steak into cubes, pat dry, and season generously with salt and pepper.
  3. Heat oil in a skillet over high heat. Sear steak cubes for 1-2 minutes per side until browned. Remove and set aside.
  4. In the same pan, melt butter over medium heat. Add garlic and chili flakes; sauté for 30 seconds.
  5. Stir in soy sauce, oyster sauce, and a splash of reserved pasta water. Simmer until slightly thickened.
  6. Add noodles to the pan and toss to coat in the sauce.
  7. Return steak to the pan and toss everything together for 1 minute.
  8. Garnish with green onions and cilantro before serving.

Notes

Bring steak to room temp before cooking for the best sear.
