Ingredients
  

Spicy Garlic Chicken
  • 1 lb boneless, skinless chicken cut into 1/2-inch cubes
  • 2 tbsp olive oil
  • 4-5 cloves garlic minced
  • 1.5 tsp red pepper flakes
  • 1 tsp smoked paprika
  • 0.5 tsp onion powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Pizza Assembly
  • 1 pre-made pizza crust or 1 lb dough
  • 1 cup thick, viscous BBQ sauce sweet and smoky
  • 1.5 cups shredded low-moisture mozzarella cheese
  • 0.5 cup shredded provolone cheese
  • 0.5 red onion thinly sliced
  • 0.25 cup fresh cilantro roughly chopped
  • 1-2 fresh red chilies optional, thinly sliced

Equipment

  • Baking sheet or Pizza stone
  • Large skillet
  • Mixing bowl

Method
 

  1. Preheat oven to 425°F (220°C). Place pizza stone in oven if using.
  2. In a bowl, combine chicken cubes with all marinade ingredients (olive oil, garlic, red pepper, paprika, onion powder, salt, pepper).
  3. Heat a skillet over medium-high heat. Cook chicken for 3-4 minutes per side until just cooked through. Set aside.
  4. Place pizza crust on a baking sheet. Spread the thick BBQ sauce evenly, leaving a border.
  5. Sprinkle with half of the cheese mixture (mozzarella and provolone).
  6. Top with the cooked spicy garlic chicken and the sliced red onions.
  7. Sprinkle with the remaining cheese.
  8. Bake for 12-15 minutes until crust is golden and cheese is bubbly and gooey.
  9. Remove from oven. Garnish immediately with fresh cilantro and optional fresh chilies.
  10. Let rest for 3-5 minutes before slicing and serving.

Notes

For the best melt, shred your own cheese from a block. The low-moisture mozzarella ensures a gooey, not watery, pizza.
