- Preheat oven to 425°F (220°C). Place pizza stone in oven if using.
- In a bowl, combine chicken cubes with all marinade ingredients (olive oil, garlic, red pepper, paprika, onion powder, salt, pepper).
- Heat a skillet over medium-high heat. Cook chicken for 3-4 minutes per side until just cooked through. Set aside.
- Place pizza crust on a baking sheet. Spread the thick BBQ sauce evenly, leaving a border.
- Sprinkle with half of the cheese mixture (mozzarella and provolone).
- Top with the cooked spicy garlic chicken and the sliced red onions.
- Sprinkle with the remaining cheese.
- Bake for 12-15 minutes until crust is golden and cheese is bubbly and gooey.
- Remove from oven. Garnish immediately with fresh cilantro and optional fresh chilies.
- Let rest for 3-5 minutes before slicing and serving.
Notes
For the best melt, shred your own cheese from a block. The low-moisture mozzarella ensures a gooey, not watery, pizza.
