Easy, no-cook Halloween appetizers made from tomato slices, mozzarella balls, black olives, and balsamic glaze to resemble spooky eyeballs.

Ingredients
  

Eyeball Components
  • 1 pint cherry/grape tomatoes, halved OR 8-10 small vine tomatoes sliced into 1/4-inch rounds
  • 1 container (8 oz) small fresh mozzarella balls bocconcini or ciliegine, drained
  • 1 small can (2.25 oz) sliced black olives drained
Glaze and Garnish
  • 0.25 cup balsamic glaze store-bought or homemade (thick gooey sauce)
  • Fresh basil leaves for garnish
  • Flaky sea salt and black pepper optional

Equipment

  • Sharp knife

Method
 

  1. Arrange tomato halves or slices cut-side up on a serving platter.
  2. Place one small mozzarella ball on the center of each tomato piece.
  3. Gently press one black olive slice into the center of each mozzarella ball to create the 'pupil'.
  4. Drizzle the thick gooey balsamic glaze over each assembled eyeball bite.
  5. Scatter fresh basil leaves around the bites on the platter. Optionally, sprinkle with flaky sea salt and pepper.
  6. Serve immediately or chill briefly.

Notes

Ensure balsamic glaze has a thick, viscous consistency for best results. Assemble just before serving for maximum freshness. Adjust mozzarella ball size to fit tomato base.
