Method
- Gently tap hard-boiled eggs all over to create small cracks in the shell, but do not peel them.
- Place cracked eggs in a bowl and submerge in beet juice/purple dye. Refrigerate 1-2 hours (or overnight for deeper color).
- Remove eggs from dye, gently peel shells, and slice each egg in half lengthwise. Place egg white halves on a platter.
- Scoop out yolks into a medium bowl. Add mayonnaise, mustard, vinegar, and green food coloring. Mash until smooth and vibrant green. Season with salt and pepper.
- Transfer yolk mixture to a piping bag with a star tip (or zip-top bag). Pipe generous swirls into each purple-marbled egg white half.
- Sprinkle black sesame seeds over each deviled egg for a 'spider egg' effect. Serve immediately or refrigerate.
Notes
Wear gloves when handling dye. For best hard-boiled eggs, use an ice bath after cooking. For a less intense green, use fewer drops of food coloring.
