Ingredients
  

Macerated Strawberries
  • 1 pint fresh strawberries hulled and sliced
  • 1 tbsp honey
  • 1 tsp balsamic vinegar
  • 1 pinch salt
Whipped Ricotta
  • 1 cup ricotta cheese whole milk
  • 1 tbsp honey
  • 0.5 tsp vanilla extract
Assembly
  • 2-4 slices sourdough bread thick sliced
  • 1 tbsp fresh basil or mint chopped
  • 1 tsp balsamic glaze optional, for drizzle

Method
 

  1. In a medium bowl, combine strawberries, 1 tbsp honey, balsamic vinegar, and a pinch of salt. Toss to coat and let sit for 10-15 minutes.
  2. In a food processor or small bowl, whip the ricotta cheese, 1 tbsp honey, and vanilla extract until smooth and fluffy (about 1 minute).
  3. Toast the bread slices until golden brown and crispy.
  4. Spread a generous layer of whipped ricotta onto each slice of toast.
  5. Top with the macerated strawberries and a drizzle of the juices.
  6. Garnish with fresh chopped herbs and a drizzle of balsamic glaze if desired. Serve immediately.

Notes

Using whole milk ricotta is key for the creamiest whipped texture. Low fat versions can be watery.
