- In a medium bowl, combine strawberries, 1 tbsp honey, balsamic vinegar, and a pinch of salt. Toss to coat and let sit for 10-15 minutes.
- In a food processor or small bowl, whip the ricotta cheese, 1 tbsp honey, and vanilla extract until smooth and fluffy (about 1 minute).
- Toast the bread slices until golden brown and crispy.
- Spread a generous layer of whipped ricotta onto each slice of toast.
- Top with the macerated strawberries and a drizzle of the juices.
- Garnish with fresh chopped herbs and a drizzle of balsamic glaze if desired. Serve immediately.
Notes
Using whole milk ricotta is key for the creamiest whipped texture. Low fat versions can be watery.
