Strawberry Cinnamon Rolls

Soft, fluffy homemade yeast rolls swirled with cinnamon sugar and topped with a luscious pink strawberry cream cheese icing and fresh berries.

Ingredients
  

Dough
  • 1 cup warm milk 110°F
  • 1 packet active dry yeast 2.25 tsp
  • 0.5 cup granulated sugar divided
  • 0.33 cup unsalted butter melted
  • 1 large egg room temp
  • 4 cups all-purpose flour approx
  • 1 tsp salt
Filling
  • 0.5 cup unsalted butter very soft
  • 1 cup brown sugar packed
  • 2 tbsp ground cinnamon
Strawberry Icing
  • 4 oz cream cheese softened
  • 0.25 cup butter softened
  • 1.5 cups powdered sugar
  • 2-3 tbsp strawberry jam or puree for flavor and color
  • 1 cup fresh strawberries halved, for garnish

  • 9x13 Baking Dish
  • Rolling pin
  • Mixing bowls

Method
 

  1. Mix warm milk and 1 tbsp sugar. Sprinkle yeast on top and let bloom for 5-10 minutes.
  2. Add melted butter, egg, remaining sugar, salt, and half the flour. Mix until combined.
  3. Add remaining flour gradually until soft dough forms. Knead for 5-7 minutes.
  4. Place in oiled bowl, cover, and let rise in warm place for 1-1.5 hours (doubled in size).
  5. Roll dough into 12x18 rectangle. Spread soft butter and top with cinnamon-brown sugar mix.
  6. Roll tightly into a log and cut into 12 rolls. Place in greased 9x13 pan.
  7. Cover and let rise again for 30-45 minutes until puffy.
  8. Bake at 350°F (175°C) for 20-25 minutes. Cool slightly.
  9. Beat icing ingredients until fluffy. Spread over warm rolls and top with fresh strawberries.

Notes

Use dental floss to cut the rolls cleanly without squishing the dough.
