Ingredients
  

Filling & Base
  • 8 oz cream cheese softened
  • 0.25 cup powdered sugar sifted
  • 1 tsp vanilla extract
  • 4 slices white bread crusts removed
  • 8 fresh strawberries hulled
Strawberry Crunch Coating
  • 20 golden sandwich cookies crushed
  • 3 tbsp strawberry gelatin powder
  • 3 tbsp unsalted butter melted
Drizzle
  • 0.5 cup white chocolate chips
  • 1 tsp coconut oil

Method
 

  1. Pulse the golden cookies in a food processor until coarse. Mix with strawberry gelatin powder and melted butter. Set aside.
  2. In a bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and fluffy.
  3. Flatten the crustless bread slices thinly using a rolling pin.
  4. Spread a layer of the cream cheese filling over each flattened bread slice.
  5. Place strawberries in a line at the edge of the bread and roll tightly into a cylinder. Wrap in plastic wrap.
  6. Chill the rolls in the refrigerator for at least 1 hour until firm.
  7. Unwrap and roll each cylinder in the prepared strawberry crunch coating until fully covered.
  8. Slice into 1-inch thick sushi pieces. Melt white chocolate with coconut oil and drizzle over the top.

Notes

Ensure strawberries are completely dry before rolling to prevent soggy bread.
