Ingredients
  

Marinated Strawberries
  • 1 pint fresh strawberries hulled and sliced
  • 1 tbsp honey
  • 1 tsp balsamic vinegar
  • 1 pinch salt
Whipped Ricotta
  • 1 cup whole-milk ricotta cheese
  • 1 tbsp honey
  • 0.5 tsp vanilla extract
Toast and Finish
  • 4 slices thick-cut bread
  • 1 tbsp butter or olive oil for toasting
  • Balsamic Glaze store-bought or homemade, for drizzling
  • Fresh herbs (basil or mint) optional garnish

Method
 

  1. Combine sliced strawberries, 1 tbsp honey, balsamic vinegar, and salt. Set aside for 10-30 minutes to marinate.
  2. In a separate bowl, combine ricotta, 1 tbsp honey, and vanilla. Beat with a mixer for 1-2 minutes until light, smooth, and airy (whipped).
  3. Toast bread slices in a skillet with butter/oil or in a toaster until golden and crispy.
  4. Spread a generous layer of whipped ricotta onto each warm toast slice.
  5. Spoon the marinated strawberries and their juices over the ricotta.
  6. Drizzle generously with balsamic glaze. Garnish with fresh herbs, if desired, and serve immediately.

Notes

If ricotta is watery, strain it before whipping. For the best gooey texture, ensure the balsamic glaze is well-reduced and thick.
