Ingredients
  

Chicken & Marinade
  • 1.5 lbs chicken breast or thighs cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp salt
Bowl Components
  • 4 cups cooked white rice
  • 2 cups corn kernels fresh, frozen, or canned
  • 1 tbsp butter
  • 0.5 cup sour cream or greek yogurt
  • 2 tbsp mayonnaise
  • 1 lime juiced
  • 0.25 cup fresh cilantro chopped

Method
 

  1. Cook rice according to package directions. Fluff with a fork and keep warm.
  2. In a bowl, toss chicken cubes with olive oil, chili powder, paprika, cumin, garlic powder, and salt until evenly coated.
  3. Heat a large skillet over medium-high heat. Add chicken in a single layer and sear for 6-8 minutes, flipping halfway, until browned and cooked through. Remove chicken and set aside.
  4. In the same skillet, melt the butter. Add the corn kernels and sauté on high heat for 3-5 minutes until golden and slightly charred.
  5. In a small bowl, whisk together sour cream, mayonnaise, and lime juice to make the sauce. Add water sparingly if too thick.
  6. Assemble bowls with a base of rice, topped with chicken and corn. Drizzle generously with the creamy sauce and garnish with cilantro.

Notes

Add Cotija cheese or feta for an extra salty kick.
