Stuffed Chocolate Chip Brioche French Toast

Ingredients
  

The Bread & Filling
  • 4 slices brioche bread thick cut (1.5 inch)
  • 1 cup chocolate chips semi-sweet or dark
  • 3 tbsp unsalted butter for frying
The Custard
  • 4 large eggs
  • 0.75 cup whole milk
  • 0.25 cup heavy cream
  • 2 tsp vanilla extract
  • 1 tbsp granulated sugar
  • 0.5 tsp cinnamon
  • 1 pinch salt

Method
 

  1. Cut a horizontal slit into the bottom of each brioche slice to create a pocket. Be careful not to cut through the sides.
  2. Stuff about 2 tablespoons of chocolate chips into the pocket of each slice. Press gently to close.
  3. In a shallow bowl, whisk together eggs, milk, cream, vanilla, sugar, cinnamon, and salt until smooth.
  4. Preheat a skillet over medium heat and melt a tablespoon of butter.
  5. Dip each stuffed slice into the custard mixture, soaking for 10-15 seconds per side. Do not over-soak.
  6. Place in the hot skillet and cook for 3-4 minutes per side, until golden brown and the chocolate inside is melted.
  7. Serve immediately topped with powdered sugar, extra chocolate chips, and syrup.

Notes

Use day-old bread for best results to prevent sogginess.
