- Cut a horizontal slit into the bottom of each brioche slice to create a pocket. Be careful not to cut through the sides.
- Stuff about 2 tablespoons of chocolate chips into the pocket of each slice. Press gently to close.
- In a shallow bowl, whisk together eggs, milk, cream, vanilla, sugar, cinnamon, and salt until smooth.
- Preheat a skillet over medium heat and melt a tablespoon of butter.
- Dip each stuffed slice into the custard mixture, soaking for 10-15 seconds per side. Do not over-soak.
- Place in the hot skillet and cook for 3-4 minutes per side, until golden brown and the chocolate inside is melted.
- Serve immediately topped with powdered sugar, extra chocolate chips, and syrup.
Notes
Use day-old bread for best results to prevent sogginess.
