Stuffed Mashed Potato Nests

Savory ground beef and pepper filling nestled inside golden baked mashed potato cups topped with melted cheese.

Ingredients
  

The Potato Base
  • 2 lbs Russet potatoes peeled and boiled
  • 2 tbsp butter
  • 0.25 cup milk warm
  • 1 large egg beaten
  • 2 tbsp fresh dill chopped
The Filling
  • 1 lb ground beef
  • 1 small onion diced
  • 1 medium red bell pepper diced
  • 1 tbsp tomato paste
  • 1.5 cups mozzarella cheese shredded
  • 1 tsp paprika

Equipment

  • Baking sheet
  • Potato masher
  • Skillet
  • Mixing bowl

Method
 

  1. Boil potatoes until tender. Mash with butter, milk, egg, and dill until smooth and moldable.
  2. Sauté onion and bell pepper in a skillet. Add beef and cook until browned.
  3. Stir in tomato paste, paprika, salt, and pepper to the meat. Cook 2 mins.
  4. Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
  5. Form potato mixture into 6 mounds. Make a deep well in the center of each to form a nest.
  6. Fill nests with meat mixture. Top generously with cheese.
  7. Bake for 15-20 minutes until cheese is melted and potato edges are golden.

Notes

Ensure the mashed potatoes aren't too wet, or the nests will collapse. Add a little flour if needed.
