Ingredients
  

Fruit Base
  • 4 medium Fresh Peaches Freestone preferred, pitted and sliced into wedges
  • 1 cup Fresh Blackberries Washed and dried well
  • 1 cup Fresh Raspberries Washed and dried well
Honey-Lime Mint Glaze
  • 2 tablespoons Fresh Lime Juice About 1 lime
  • 1 tablespoon Honey Adjust based on the sweetness of your fruit
  • 2 tablespoons Fresh Mint Finely chopped or torn

Equipment

  • Cutting board
  • Sharp knife
  • Large serving bowl
  • Small whisk

Method
 

  1. Wash all fruit thoroughly and pat completely dry with a clean towel. Excess water will water down the salad.
  2. Halve the peaches, remove the pits, and slice them into evenly sized wedges.
  3. In a large, wide serving bowl, gently combine the sliced peaches, blackberries, and raspberries.
  4. In a small bowl, whisk together the fresh lime juice and honey until the honey is completely dissolved.
  5. Drizzle the honey-lime dressing over the fruit. Using two spoons, very gently fold the fruit to coat, taking care not to crush the raspberries.
  6. Sprinkle the fresh chopped mint over the top of the salad and give it one final, gentle toss.
  7. Let the salad sit at room temperature for 10-15 minutes before serving to allow the juices to macerate and blend.

Notes

Best served fresh on the day it is made. Leftovers can be stored in an airtight container in the fridge for up to 2 days, though the fruit will soften significantly.
