Sun-Dried Tomato & Ricotta Stuffed Shells

Ingredients
  

Shells & Base
  • 12 oz jumbo pasta shells approx 20-22 shells
  • 1 jar (optional, or use oil) marinara sauce or a light cream or oil base
Spinach-Ricotta Filling
  • 32 oz whole-milk ricotta cheese
  • 1 package (10 oz) frozen chopped spinach thawed and squeezed dry
  • 2 cups shredded mozzarella cheese divided
  • 1 cup grated parmesan cheese divided
  • 1 large egg lightly beaten
  • 2 teaspoons minced garlic
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon red pepper flakes
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
Topping & Extra Flavor
  • 1 cup oil-packed sun-dried tomatoes drained and finely chopped
  • 1 tablespoon reserved sun-dried tomato oil
  • Fresh parsley optional, for garnish

Method
 

  1. Preheat oven to 375°F (190°C). Spray a 9x13 inch baking dish with non-stick cooking spray and spread a small amount (about 1/2 cup) of marinara sauce (if using) onto the bottom. Alternatively, use a drizzle of the sun-dried tomato oil.
  2. Cook the jumbo shells in a large pot of salted boiling water according to package directions, removing them 2-3 minutes before fully al dente. Rinse with cold water to stop cooking and cool.
  3. In a large bowl, make the filling. Combine ricotta, squeezed-dry spinach, 1 cup of mozzarella, 1/2 cup of parmesan, beaten egg, minced garlic, garlic powder, onion powder, red pepper flakes, salt, and black pepper. Stir well.
  4. Gently fold in half (1/2 cup) of the chopped sun-dried tomatoes and the reserved 1 tablespoon of sun-dried tomato oil into the filling.
  5. Stuff each cooled shell and place them, side-by-side and slightly overlapping, in the prepared baking dish.
  6. Pour the remaining marinara sauce (if using) over the shells, lightly covering them. Skip this step for non-red sauce base and focus on the topping.
  7. Scatter the remaining 1/2 cup of sun-dried tomatoes over the top.
  8. Sprinkle with the remaining 1 cup of mozzarella and 1/2 cup of parmesan cheese.
  9. Cover the dish tightly with foil and bake for 25 minutes.
  10. Remove the foil and continue to bake for another 10-15 minutes, or until the cheese is melted, bubbly, and slightly golden. A shell should be over 160°F internal.
  11. Let rest for 5-10 minutes before serving. Garnish with fresh chopped parsley if desired.

Notes

You can prepare and assemble this dish completely, then freeze unbaked for up to 3 months. Instructions for make-ahead and reheating from frozen are provided in the main article. Consider adding Italian sausage to the filling for a meat version.
