Method
- Pat the chicken dry and season well with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken in a single layer and sear for 3-4 minutes per side until golden brown and cooked through. Remove to a plate.
- Reduce heat to medium. In the same skillet, add garlic, ginger, and sliced jalapeños. Sauté for 1-2 minutes until fragrant.
- Pour in the soy sauce, honey, and apple cider vinegar. Scrape up any browned bits from the bottom of the pan. Simmer for 2 minutes until it begins to thicken.
- Add the sliced peaches to the pan. Toss in the sauce and cook for 2-3 minutes just until softened but still holding their shape.
- Return the chicken to the skillet. Toss everything together to coat evenly in the sticky glaze. Cook for 1 minute to heat through.
- Garnish with fresh cilantro and serve immediately over rice or quinoa.
Notes
If fresh peaches are unavailable, use frozen peach slices. Add them directly to the sauce without thawing, but cook an extra minute or two. Avoid canned peaches as they are too soft.
