Ingredients
  

Appetizer Base
  • 2 large sweet potatoes peeled and cubed (1 inch)
  • 1 lb bacon standard cut, strips cut in half
  • 1 tbsp olive oil
  • 0.5 tsp cinnamon
Glaze & Topping
  • 0.25 cup maple syrup
  • 2 tbsp brown sugar packed
  • 12 large marshmallows cut in half (or use mini)

  • Baking sheet
  • Parchment paper
  • Skewers or toothpicks
  • Pastry brush

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Soak skewers in water.
  2. Toss sweet potato cubes with olive oil and cinnamon.
  3. Wrap each cube with a piece of bacon and secure with a skewer.
  4. Place on baking sheet and bake for 25-30 minutes until bacon starts to crisp.
  5. Whisk maple syrup and brown sugar together. Brush over the bites.
  6. Bake for another 10 minutes until glaze is sticky and bacon is cooked.
  7. Top each skewer with a marshmallow piece. Broil for 1-2 minutes until toasted.
  8. Allow to cool for 5 minutes before serving.

Notes

Watch the marshmallows closely during the broil step—they burn in seconds! Use standard bacon, not thick-cut.
