Method
- Preheat oven to 350°F (175°C). Line an 8x8 or 9x9 inch baking pan with parchment paper.
- In a large bowl, whisk the melted butter, granulated sugar, and brown sugar together until well combined.
- Whisk in the eggs one at a time, followed by the root beer extract and vanilla extract.
- Fold in the flour, cocoa powder, and salt until just combined. Do not overmix.
- Pour the batter into the prepared pan and smooth the top. Bake for 25-35 minutes, or until a toothpick inserted comes out with moist crumbs.
- Allow the brownies to cool completely in the pan before frosting.
- To make the frosting, beat the softened butter until creamy. Gradually add powdered sugar, mixing until smooth.
- Add vanilla extract and heavy cream, then beat on high speed until light and fluffy.
- Spread the frosting evenly over the cooled brownies. Cut into squares and serve.
Notes
For an even stronger root beer flavor, you can replace 2 tablespoons of the butter with 2 tablespoons of reduced root beer syrup.
