Sweet & Savory Asian Mango Glazed Chicken

Ingredients
  

Chicken & Sauce
  • 1.5 lbs chicken breast or thighs sliced or cubed
  • 2 large ripe mangoes 1 pureed for sauce, 1 diced for topping
  • 0.25 cup soy sauce low sodium
  • 2 tbsp honey
  • 1 tbsp fresh ginger grated
  • 2 cloves garlic minced
  • 1 tbsp lime juice
  • 1 tsp Sriracha optional
For Serving
  • 2 cups jasmine rice cooked
  • 0.25 cup cilantro chopped

Equipment

  • Large skillet
  • Blender or Food Processor
  • Chef's knife

Method
 

  1. Puree the flesh of one mango. Whisk pureed mango with soy sauce, honey, ginger, garlic, lime juice, and Sriracha.
  2. Dice the second mango and set aside for garnish.
  3. Heat oil in a large skillet over medium-high heat. Sear chicken pieces until golden brown (about 3-4 mins per side).
  4. Pour the mango sauce into the skillet. Reduce heat to medium-low and simmer.
  5. Cook until the sauce reduces, thickens, and creates a sticky glaze over the chicken (approx 3-5 mins).
  6. Serve chicken over warm rice, topped with the reserved diced mango and fresh cilantro.

Notes

For extra gloss, add a tablespoon of butter to the sauce right at the end of cooking.
