Sweet & Spicy Whipped Feta Crostini with Hot Honey

Ingredients
  

Whipped Feta
  • 8 oz feta cheese block in brine, crumbled
  • 4 oz cream cheese full-fat, softened
  • 2 tbsp extra virgin olive oil
  • 1 clove garlic minced (optional)
  • 1 tbsp fresh lemon juice
  • Black pepper to taste
Hot Honey
  • 0.5 cup honey
  • 1-2 tsp red pepper flakes adjust to taste
  • 0.5 tsp hot sauce optional
  • 1 pinch salt
Crostini & Garnish
  • 1 French baguette sliced into 1/2-inch rounds
  • Olive oil for brushing
  • 2 tbsp sesame seeds
  • Fresh thyme leaves for garnish

Equipment

  • Food processor
  • Baking sheet
  • Small saucepan

Method
 

  1. Preheat oven to 400°F (200°C). Arrange baguette slices on a baking sheet, brush with olive oil.
  2. Bake for 8-10 minutes, flipping once, until golden and crispy. Set aside.
  3. In a small saucepan, combine honey, red pepper flakes, optional hot sauce, and salt. Warm over medium-low heat for 3-4 minutes. Do not boil. Remove from heat to cool and thicken.
  4. In a food processor, combine feta, softened cream cheese, 2 tbsp olive oil, garlic, and lemon juice.
  5. Blend for 2-3 minutes, scraping down sides as needed, until completely smooth, creamy, and thick. Add black pepper.
  6. Spread a thick, heavy dollop of whipped feta on each cooled crostini.
  7. Drizzle generously with the thick, gooey hot honey.
  8. Garnish with sesame seeds and fresh thyme leaves. Serve immediately.

Notes

The hot honey will thicken as it cools, resulting in a perfect, viscous, gooey drizzle. For the creamiest feta, make sure your cream cheese is fully softened.
