- Preheat oven to 400°F (200°C). Arrange baguette slices on a baking sheet, brush with olive oil.
- Bake for 8-10 minutes, flipping once, until golden and crispy. Set aside.
- In a small saucepan, combine honey, red pepper flakes, optional hot sauce, and salt. Warm over medium-low heat for 3-4 minutes. Do not boil. Remove from heat to cool and thicken.
- In a food processor, combine feta, softened cream cheese, 2 tbsp olive oil, garlic, and lemon juice.
- Blend for 2-3 minutes, scraping down sides as needed, until completely smooth, creamy, and thick. Add black pepper.
- Spread a thick, heavy dollop of whipped feta on each cooled crostini.
- Drizzle generously with the thick, gooey hot honey.
- Garnish with sesame seeds and fresh thyme leaves. Serve immediately.
Notes
The hot honey will thicken as it cools, resulting in a perfect, viscous, gooey drizzle. For the creamiest feta, make sure your cream cheese is fully softened.
