Ingredients
  

The Basics
  • 28 oz cocktail sausages 2 packs
  • 2 cups pineapple chunks fresh or canned
  • 1 tbsp vegetable oil
The Glaze
  • 1 cup brown sugar packed
  • 0.5 cup ketchup
  • 0.25 cup soy sauce low sodium
  • 1 tbsp rice vinegar
  • 2 cloves garlic minced
  • 1 tsp ginger grated
  • 0.5 tsp red chili flakes
Garnish
  • 1 tbsp fresh parsley chopped

Method
 

  1. Prep the pineapple by cutting it into bite-sized chunks (if fresh) or draining well (if canned).
  2. Heat oil in a large skillet over medium-high heat. Add sausages and pineapple.
  3. Cook for 5-6 minutes, stirring occasionally, until sausages are browned and pineapple has golden sear marks.
  4. In a bowl, whisk together brown sugar, ketchup, soy sauce, vinegar, garlic, ginger, and chili flakes.
  5. Pour sauce over the sausage mixture. Reduce heat to medium-low.
  6. Simmer for 5-8 minutes until the glaze thickens and coats the ingredients.
  7. Remove from heat, garnish with parsley, and serve warm with toothpicks.

Notes

For slow cooker: Combine all ingredients in crockpot and cook on High for 2 hours. This recipe doubles easily for large crowds.
