Thai Basil Beef Rolls

Ingredients
  

Filling
  • 1 lb ground beef
  • 5 cloves garlic minced
  • 3 bird's eye chilies chopped
  • 2 cups Thai basil leaves
  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 tsp dark soy sauce optional
  • 1 tbsp fish sauce
  • 1 tsp sugar
  • 1 tbsp vegetable oil
Wrappers
  • 12 sheets rice paper wrappers
Dipping Sauce
  • 3 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tsp chili garlic sauce optional

Equipment

  • Large skillet or wok
  • Cutting board
  • Shallow bowl (for water)

Method
 

  1. Heat oil in a wok over high heat. Add garlic and chilies, stir-fry for 30 seconds.
  2. Add ground beef and cook until browned, breaking it up into small crumbles.
  3. Stir in oyster sauce, soy sauce, dark soy sauce, fish sauce, and sugar. Cook until sauce thickens and coats meat.
  4. Turn off heat and stir in basil leaves until wilted. Let mixture cool slightly.
  5. Dip a rice paper sheet in warm water for 5-10 seconds to soften.
  6. Place a spoonful of beef mixture onto the wrapper and roll up tightly.
  7. Repeat with remaining ingredients.
  8. Serve immediately with dipping sauce.

Notes

Make sure the filling is cool before rolling to prevent wrappers from tearing.
