Thai Basil Beef Rolls

Ingredients
  

Filling
  • 1 lb ground beef or pork/chicken
  • 4 cloves garlic minced
  • 2 whole Thai chilies finely chopped
  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 tsp fish sauce
  • 1 tsp brown sugar
  • 1 cup Thai basil leaves half chopped, half whole
Wrappers
  • 12 sheets rice paper round
  • 2 tbsp neutral oil for frying
Dipping Sauce
  • 2 tbsp soy sauce or fish sauce
  • 1 tbsp lime juice
  • 1 tsp sugar
  • 1 tbsp chili rings red and green

Equipment

  • Large skillet
  • Cutting board
  • Large Shallow Bowl

Method
 

  1. Stir-fry garlic, chilies, and ground beef in a skillet until browned.
  2. Add oyster sauce, soy sauce, fish sauce, and sugar. Cook until liquid evaporates.
  3. Stir in chopped basil leaves, remove from heat, and let cool completely.
  4. Dip a rice paper sheet in warm water for 2-3 seconds. Lay flat.
  5. Place a whole basil leaf in the center, top with 2 tbsp filling, and roll tightly.
  6. Heat oil in a non-stick skillet over medium heat.
  7. Fry rolls seam-side down for 3-4 minutes per side until blistered and crispy (do not let them touch).
  8. Mix dipping sauce ingredients and serve with hot rolls.

Notes

If using thin rice paper, double wrap (use two sheets per roll) to prevent bursting during frying.
