Thai Basil Beef Rolls

Savory, spicy ground beef stir-fry with fresh Thai basil, wrapped in translucent rice paper for a chewy, flavorful appetizer or light meal.

Ingredients
  

The Filling
  • 1 lb ground beef 85% lean
  • 4 cloves garlic minced
  • 1 tbsp fresh ginger minced
  • 2 shallots finely sliced
  • 2-4 Thai chilies finely chopped, adjust to taste
  • 2 cups Thai basil leaves packed
The Sauce
  • 2 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 tsp fish sauce
  • 1 tsp dark soy sauce optional for color
  • 1 tsp brown sugar
Wrapping
  • 12 sheets rice paper round (22cm)
  • 1 tbsp chili oil for brushing
  • 1 tsp sesame seeds toasted

Equipment

  • Wok or Large Skillet
  • Shallow dish for water
  • Cutting board
  • Sharp knife

Method
 

  1. In a small bowl, whisk together oyster sauce, soy sauce, fish sauce, dark soy sauce, and sugar. Set aside.
  2. Heat oil in a wok over medium-high heat. Add garlic, ginger, shallots, and chilies. Stir-fry for 2 minutes until fragrant.
  3. Add ground beef to the pan. Break it up with a spatula and cook until browned and cooked through (about 5-6 minutes).
  4. Pour the sauce mixture over the beef. Stir well to coat and cook for another minute to thicken the glaze.
  5. Remove from heat. Immediately stir in the Thai basil leaves until just wilted. Transfer mixture to a bowl to cool slightly.
  6. Dip a sheet of rice paper into warm water for 5-10 seconds. Lay it on a damp surface.
  7. Place a fresh basil leaf in the center, top with 2-3 tablespoons of beef filling. Fold sides in and roll tightly.
  8. Brush rolls with chili oil and sprinkle with sesame seeds. Serve immediately.

Notes

Serve with a lime-chili dipping sauce for extra acid to cut the richness.
