Thai Chicken Pizza with Peanut Sauce

Ingredients
  

The Sauce
  • 0.5 cup creamy peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tbsp honey
  • 1 tsp ginger minced
  • 1 clove garlic minced
  • 2-3 tbsp water to thin
The Pizza
  • 1 lb pizza dough
  • 1 cup cooked chicken chopped or shredded
  • 2 cups mozzarella cheese shredded
  • 0.5 cup shredded carrots
  • 0.5 cup red bell pepper sliced
  • 2 tbsp green onions chopped
  • 0.25 cup fresh cilantro chopped
  • 2 tbsp roasted peanuts chopped

Equipment

  • Pizza stone or baking sheet
  • Rolling pin
  • Small whisk
  • Pizza cutter

Method
 

  1. Preheat oven to 450°F (230°C).
  2. Whisk peanut butter, soy sauce, vinegar, sesame oil, honey, ginger, garlic, and water until smooth.
  3. Toss the chicken with 2 tablespoons of the sauce.
  4. Roll out pizza dough. Spread remaining sauce over the base.
  5. Top with half the cheese, the chicken, peppers, carrots, and remaining cheese.
  6. Bake for 12-15 minutes until crust is golden and cheese is bubbly.
  7. Remove from oven and top with green onions, cilantro, and peanuts.
  8. Slice and serve immediately.

Notes

Add bean sprouts after baking for an authentic crunch. Drizzle with sriracha for extra heat.
