- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cook the quinoa or brown rice according to package instructions. Set aside.
- Toss the cubed sweet potatoes with olive oil, salt, and pepper. Spread evenly on the baking sheet and roast for 25-30 minutes until tender and caramelized.
- Steam the broccoli florets for 4-5 minutes until crisp-tender and bright green. Remove from heat.
- Whisk together the peanut butter, soy sauce, maple syrup, lime juice, ginger, and garlic. Gradually whisk in warm water until the dressing reaches a smooth, pourable consistency.
- Assemble the bowls: Divide the cooked grains, roasted sweet potatoes, steamed broccoli, and sliced avocado evenly between two bowls.
- Drizzle generously with the Thai peanut dressing.
- Garnish with chopped peanuts and fresh cilantro. Serve immediately.
Notes
Excellent for meal prep. Store the dressing and avocado separately from the roasted veggies and grains until ready to eat.
