Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour spooned and leveled
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
Wet Ingredients
  • 0.5 cup unsalted butter softened
  • 0.5 cup brown sugar packed
  • 0.5 cup granulated sugar
  • 1 large egg room temperature
  • 1 tsp vanilla extract
  • 1 cup mashed banana approx 2 large very ripe bananas
  • 0.5 cup walnuts chopped, optional

Method
 

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg. Set aside.
  3. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).
  4. Beat in the egg and vanilla extract until well combined. Stir in the mashed bananas.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in nuts if using.
  6. Scoop dough by tablespoonfuls onto prepared baking sheets, spacing 2 inches apart.
  7. Lightly press down on each cookie with a fork to create a crisscross pattern and flatten slightly.
  8. Bake for 10-12 minutes until edges are golden. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

Chill the dough for 30 minutes if it feels too sticky to handle.
