- Prep the Field: Preheat your oven to 400°F (200°C). Line a large, rimmed baking sheet with aluminum foil. If you have an oven-safe wire rack, place it on top of the foil-lined sheet (this is recommended for crispier bacon and easier cleanup).
- Cut Your Players: Cut the kielbasa into 1-inch thick rounds. Cut your **thin-cut bacon** strips into thirds (crosswise).
- Wrap 'em Up: Wrap one piece of bacon around the circumference of each kielbasa round, overlapping slightly. Secure the bacon with a wooden toothpick if desired. Place each bacon-wrapped bite on the wire rack (or directly on the foil) **seam-side down**.
- The First Bake: Bake for 15 minutes. This allows the bacon fat to start rendering.
- Make the Glaze: While the bites are in the oven, whisk together the **dark brown sugar**, **Dijon mustard**, garlic powder, and black pepper in a small bowl. It will form a thick, **gooey, viscous paste**.
- Glaze the Bites: After 15 minutes, remove the pan from the oven. Using a pastry brush, generously brush the thick glaze over the top and sides of each kielbasa bite.
- The Final Bake: Return the pan to the oven and bake for another 10-15 minutes, or until the bacon is crispy and the glaze is thick, bubbly, dark, and beautifully **caramelized**. Keep a close eye on it during the last 5 minutes to prevent burning.
- Make the Dip: While the bites are in their final bake, whisk together all the ingredients for the Creamy Mustard Dipping Sauce in a small bowl (mayonnaise, whole-grain mustard, Dijon, honey/syrup, and vinegar). Season with salt, pepper, and a pinch of cayenne if you like.
- Serve: Let the kielbasa bites cool for at least 5-10 minutes (the glaze is extremely hot). Remove the toothpicks (if used), pile them on a platter, garnish with fresh parsley (optional), and serve warm with the dipping sauce.
Notes
You can assemble the bites up to 24 hours in advance and refrigerate. Just add a few extra minutes to the first bake time. For cleanup, **always** use aluminum foil—the caramelized sugar is difficult to scrub off. You can also cook these in an air fryer at 380°F (190°C) for 8-10 minutes, then glaze, and cook for an additional 3-4 minutes.
