Ingredients
  

For the Dressing
  • 0.25 cup low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp toasted sesame oil
  • 1-2 tbsp chili garlic sauce or Sriracha
  • 1 tsp grated fresh ginger
  • 1 clove garlic minced
  • 1 tsp honey or maple syrup optional
For the Salad
  • 1 package (12-16 oz) frozen dumplings or potstickers
  • 1 tbsp neutral oil e.g., canola
  • 0.25 cup water for steaming
  • 1 bag (12 oz) coleslaw mix
  • 1 cup shelled edamame cooked and cooled
  • 0.5 cup fresh cilantro chopped
  • 3 green onions thinly sliced
For Topping
  • 0.25 cup toasted sliced almonds
  • 1 tbsp sesame seeds
  • 1 lime cut into wedges

Method
 

  1. In a small bowl or jar, whisk together all dressing ingredients (soy sauce, rice vinegar, sesame oil, chili sauce, ginger, garlic, and optional honey) until emulsified. Set aside.
  2. Heat the neutral oil in a large non-stick skillet over medium-high heat. Place frozen dumplings in a single layer, flat side down, and cook for 2-3 minutes until the bottoms are golden brown.
  3. Carefully add the 1/4 cup of water to the pan (it will steam) and immediately cover with a lid. Reduce heat to medium-low and steam for 5-7 minutes, until dumplings are cooked through.
  4. Remove the lid and let any remaining water evaporate, allowing the bottoms to re-crisp for another minute.
  5. In a large serving bowl, combine the coleslaw mix, cooked edamame, chopped cilantro, and most of the green onions.
  6. Add the hot, cooked dumplings directly to the salad bowl. Pour the prepared dressing over everything.
  7. Add the toasted almonds and sesame seeds. Toss gently to combine, ensuring everything is coated in the dressing.
  8. Serve immediately, garnished with the remaining green onions and a fresh lime wedge.

Notes

For an extra crispy version, cook the dumplings in an air fryer at 380°F (190°C) for 8-10 minutes. Feel free to add other crunchy vegetables like sliced bell peppers or cucumbers.
