- Pat tilapia fillets dry and season on both sides with salt, pepper, and regular paprika.
- Heat olive oil in a large skillet over medium-high heat. Sear fish for 2-3 minutes per side until golden. Remove fish and set aside.
- In the same skillet, melt the butter. Add diced onions and cook for 5 minutes until soft. Add garlic and cook for 1 minute.
- Transfer the onion mixture and roasted red peppers to a blender. Blend until smooth (or leave chunky if preferred).
- Pour the sauce back into the skillet. Stir in the broth, smoked paprika, and simmer for 3 minutes.
- Reduce heat to low and stir in the heavy cream. Taste and season with salt and pepper.
- Return the tilapia fillets to the skillet, spooning sauce over them. Simmer gently for 2-3 minutes until fish is cooked through.
- Garnish with fresh parsley and serve hot.
Notes
Serve with rice or crusty bread to soak up the sauce.
