Tilapia in Roasted Pepper Sauce

Ingredients
  

Fish
  • 4 fillets tilapia or other white fish
  • 1 tsp paprika
  • 1 tbsp olive oil
  • 1 pinch salt and pepper
Sauce
  • 12 oz jarred roasted red peppers drained
  • 1 small onion diced
  • 3 cloves garlic minced
  • 0.5 cup heavy cream
  • 0.25 cup vegetable broth
  • 1 tbsp butter
  • 0.5 tsp smoked paprika
  • 1 tbsp fresh parsley chopped, for garnish

Method
 

  1. Pat tilapia fillets dry and season on both sides with salt, pepper, and regular paprika.
  2. Heat olive oil in a large skillet over medium-high heat. Sear fish for 2-3 minutes per side until golden. Remove fish and set aside.
  3. In the same skillet, melt the butter. Add diced onions and cook for 5 minutes until soft. Add garlic and cook for 1 minute.
  4. Transfer the onion mixture and roasted red peppers to a blender. Blend until smooth (or leave chunky if preferred).
  5. Pour the sauce back into the skillet. Stir in the broth, smoked paprika, and simmer for 3 minutes.
  6. Reduce heat to low and stir in the heavy cream. Taste and season with salt and pepper.
  7. Return the tilapia fillets to the skillet, spooning sauce over them. Simmer gently for 2-3 minutes until fish is cooked through.
  8. Garnish with fresh parsley and serve hot.

Notes

Serve with rice or crusty bread to soak up the sauce.
